In addition to the grafting in of the Gentiles and the inclusion of the Gentiles in the New Covenant, there was also the justification of the Gentiles by God through faith. Read Gal 3:8-9:

8 And the Scripture, foreseeing that God would justify the Gentiles by faith, preached the gospel to Abraham beforehand, saying, “In you all the nations shall be blessed.” 9 So then those who are of faith are blessed with believing Abraham.

I believe it is true that every New Testament author except Luke was Jewish. So you're just throwing out the Entire New Testament? Then there is no possible way for anyone to be saved. The Old Covenant and the temple are gone, so there's no salvation there. If we take away the New Testament, then nobody can be saved. Who is it that doesn't want anyone to be saved?
No, every person who wrote the New Covenant manuscripts that comprise the New Covenant writings from Matthew to Revelation were all Hebrew descent for one unyielding reason, and that reason is that God gave possession of His Holy Word to the Hebrew people to whom His covenant Word was sent. Even Luke if he was of mixed heritage, meaning he had at least one Hebrew parent in his family line is still the seed of Abraham just as the Samaritans were also the seed of Abraham and inheritors of the promises of God.

The Old Covenant of Abraham and Mosaic Law are not gone but that there is a way to be saved by the Word of God just as Saul says and Peter as well.

24 Wherefore the law was our schoolmaster to bring us unto Christ, that we might be justified by faith.
Gal. 3:24.

And the faith by which we are justified is the faith Jesus expressed to God for all He did in His life on earth as Christ and the only faith God honored in our stead since dead men do not have faith as per may passages including Eph. 2:1.

And Peter also understood that we are saved by the Word of God and that Word Peter is referring to is the Old Covenant Scripture:

THEY were the ones "kept" until Faith in the Person of Christ should appear, and appear He did as the only begotten Son of the Living God. And until the Lamb of God in time could be sacrificed to atone for this "kept" people called Hebrew they were all "kept", possibly "kept" named in the lamb's book of life who was slain for them and only them as says the Scripture (the Word of God) to Abraham when his covenant was made with him and with his seed. Saul was a rabbi and a Pharisee. He KNEW the meaning of Scripture and is only applying the original meaning in Galatians 3: 8-9.

The original "nations" in Galatians 3: 8 refers to the descendants of Ishmael and Esau, upon which neither of them the covenant did not go through but are still Abraham's seed and became a people of nations and kings that rose up in their own family histories even to Saul's day.

As for the term "heathen" which Saul uses refer to the majority of Jews who did not return back to Israel when Cyrus of Babylon gave them permission to do so in 522 BC. For over five hundred years the offspring of these Jews being in captive and also living in Gentile lands in time their offspring of mixed heritage (Jew-Gentile) did not retain their commitment to the Mosaic Covenant as had the two southern tribes - Judah and Benjamin - did for the most part and these two tribes maintained some semblance of the Mosaic Covenant to which any of the ten northern tribes assimilated into Judah and Judaism which they brought to Israel when the remnant returned. The offspring of the ten northern tribes in 500 years had intermarried with Gentiles (also rape, slavery, and concubinage) whose children departed from the existing Judaism in Babylon and also in other Gentile lands lived as Gentiles absorbing their culture and yes, even their worship of false gods. These are the "heathens" Saul is referring to for he also knew that the Abraham covenant is between God and the Hebrew people and never between God and non-Hebrew Gentiles. Such belief breaks Scripture and violates the Word of God. These Jews of Gentile descent were identified as Samaritans and Hellenist.

To cut to the chase there is NO MENTIONING of non-Hebrew Gentiles in the Abraham, Mosaic, and New Covenants between God and the Hebrew people. God Himself makes reference to Abram's heritage by calling him "Hebrew" in Genesis 14:13.
But as a point of truth and fact there is nowhere in the Hebrew Scriptures God making the three Hebrew covenants with the Hebrew people God including non-Hebrew Gentiles. None. And that is where your break with Scripture resides. There are NO NON-HEBREW GENTILES in any of the three Hebrew Covenants. None.

There is evidence Hebrews wasn't written by Saul. It seems you're not well read up on the deeper things of God.
Tradition has often attributed it to Saul, modern scholarship generally disagrees.

The primary reason for doubting Saul's authorship is the significant difference in writing style and vocabulary between Hebrews and Saul's other letters. Hebrews lacks the typical salutation and personal references that are common in Saul's epistles.

Several other persons have been proposed as potential authors, including Barnabas, Apollos, Luke, and Silas. There is a reason why Jesus' interaction with Samaritans is in the bible.
