The centurion was mixed-race. The Canaanite woman was also mixed-race. Gentiles were not aware of the Hebrew Scripture that identified Jesus as Messiah, Lord, and King. Gentiles served false gods of stone, wood, etc.

Your interpretations of the above passages are in error. You ADD Gentiles to the Hebrew covenants and the Hebrew inheritance. There are three Hebrew covenants and none of them include Gentilea.

Notice Jesus says that many shall come from the east and the west and SIT DOWN WITH ABRAHAM, ISAAC, AND JACOB, not with any Gentiles. There were no Gentiles at Jesus last Passover. And remember, the Passover is wholly Hebrew and is part of God's Law to the Hebrew people. God made no covenant with Gentiles for their salvation for salvation is of the Jews NOT Gentiles.

Above Jeremiah calls Israel a flock. Nowhere in the Scripture does God call Gentiles "a flock."
Only Israel. And in John's gospel:

NONE of the passages you post describe a covenant between God and non-Hebrews. God saves through promises/covenant and there is no covenant between God and Gentiles.

God saves through promises/covenant. The Old Testament is Hebrew in origin and records Israel's relationship with God. The Law, the Psalms, and the Prophets - the Hebrew Bible - does not have any covenant between God and Gentiles. If you can show me a covenant between God and non-Hebrew Gentiles then you have an argument. But since there is nothing in the Hebrew Bible of a covenant or even promises of salvation for Gentiles then all your passages don't apply. Abraham has covenant with God and the terms and promises are recorded for Hebrew posterity. The children of Israel have covenant with God called the Mosaic Covenant, even the New Covenant prophesied by Jeremiah is between God and the House of Israel and the House of Judah and we see the terms of covenant described in Scripture. The Law, the Psalms, and the Prophets - the Hebrew Bible - records and DESCRIBES God's covenant with Abraham and his seed, a people later to be called the children of Israel. You can't post Scripture of covenant between God and non-Hebrews because there is none. Here, this is what a covenant looks like:

8 And God spake unto Noah, and to his sons with him, saying,
9 And I, behold, I establish my covenant with you, and with your seed after you; Genesis 9:8–9.

In the Old Testament, the establishment of the covenant between God and the children of Israel is a progressive revelation, primarily centered on the events at Mount Sinai and the subsequent renewals in the plains of Moab.
From a Rabbinical and Hebraic perspective, these moments are not merely legal contracts but a formal "marriage" or Betuach between the Creator and the nation of Israel.

5 Now therefore, if ye will obey my voice indeed, and keep my covenant, then ye shall be a peculiar treasure unto me above all people: for all the earth is mine:
6 And ye shall be unto me a kingdom of priests, and an holy nation. These are the words which thou shalt speak unto the children of Israel. Exodus 19:5–6.

God's covenants with Israel is recorded in Hebrew Scripture, contains words describing covenant, and there are terms of covenant between God and the person or group of people such as those called the children of Israel.
There is NO COVENANT between God and Gentiles. IF GOD made covenant with Gentiles they would have their own Bible and that Bible will record and describe any covenant between God and Gentiles and most likely there will be Gentile prophets prophesying against Gentiles giving them instruction and guidance in their relationship and covenant with God BUT there is NO COVENANT between the God of Abraham and God who chose Abraham to have covenant with. A God-Gentile covenant doesn't exist! Posting Scripture about being a light or the "nations" that will worship God is NOT a covenant.
