In 1 Peter 1:16, it says to be holy for God is holy, which is a quote from Leviticus where God was giving instructions for how to do that, which includes refraining from eating unclean animals (Leviticus 11:44-45).

Except in the N.T. Jesus declares all foods clean. Its not what a man puts into his mouth that defiles him but what comes out of his mouth that defiles him.

Jesus is one with the Father, so he should not be interpreted as teaching us to rebel against Him, especially when he just finished criticizing the Pharisees as being hypocrisies for setting aside the commands of God. It is questionable whether Mark 7:19 should be translated as "thus he declared all foods clean" especially when there is no "thus He declared" in the Greek, however, even if it were granted that that is the correct translation, it still wouldn't mean that we can eat unclean animals.

The animals that are considered to be food vary from culture to culture. For example, when most Americans speak about eating animals as food, they are generally speaking about eating animals like cows, chickens, or pigs while they would be revulsed at the thought of eating animals like horses, cats, dogs, rats, bats, or vultures, so there already a sense that certain animals are not food, but Jews would include pigs and other unclean animals that God said are not food in Leviticus 11 and Deuteronomy 14. So id there is one Jew speaking to a group of Jews about eating animals a food, then we should consider then to be speaking about the animals that they consider to be food, not insert the things animals that we consider to be food. For example, a cannibal should not interpret Mark 7:19 as saying that human flesh is good to eat. Furthermore, Jesus and the Pharisees were not even speaking about eating animals, but rather they were speaking about being made common by eating bread with unwashed hands, which is a completely different topic. In Matthew 15:20, Jesus was still speaking against being made common by eating with unwashed hands, so he never jumped topics to teaching rebellion against God.

In Deuteronomy 4:2, it is a sin to add to or subtract from the law, so if Jesus had done as you suggest, then he would have sinned and therefore disqualified himself as being our Savior. Moreover, in Deuteronomy 13:1-5, the way that God instructed His people to determine that someone was a false prophet who was not speaking for Him was if they taught against obeying His law, so if Jesus had done that, then according to God we should consider him to be a false prophet. They wouldn't have needed to find false witnesses as his trial, but this incident was never even brought up, and no one seemed to have noticed or that he made a radial statement in rebellion against the Father. It is far, far more reasonable to simply interpret Jesus as continuing to speak in regard to the topic of conversation.
